Thanksgiving is an American holiday not celebrated in
Cajun country until Americanization. Cajuns didnt put up much of a fight against having another reason to have a big get-together with lots of food.
We did Cajunize it though, in my family we had panse bourée (chaudin in some areas-stuffed pig stomach), farre (rice dressing or dirty rice), and gumbo.
I really dont know, could very well be something brought from France. But just as likely that we eat it because in the good old days they didnt waste anything edible and it was good enough to keep around. I bet it was eaten in a lot of places that dont eat it now. People seem to quit eating some things as cultures change, even in Louisiana.
