It's also really interesting how well documented are Comeaux's arguments for the Louisiana accordion tradition having a strong creole input back in the 19th century.
Seems like numerous louisiana traditions were borrowed from caribean creole culture. For instance tasso doesn't exist in Acadiaan cuisine in eastern Canada, but I see signs for it in the Haitian grocery stores here in Montreal.
