Cajun music and the bass guitar

I play bass and when I listen to music of any kind, I always listen to the bass guitar first...I have always done that. When I first exposed to Cajun music, I was amazed by the bass played on the Cajun waltz's, the bassline is walked, hitting all three notes. My question is, is this unique to Cajun music? Does anybody know how this was developed? I have also heard Cajun watltz's that were not walked too. What about the stand up bass players, did they walked their bass on the Cajun waltz's.
