The word is of Caribbean origin, from the Carib indigenous language, and means "sea turtle," Indeed, in some areas of Louisiana such as Evangeline and Lafourche Parishes, its literal meaning is the only one known. However, Louisianians from areas where only the figurative meaning is known have been at times shocked and offended to leave their dialectical area and find themselves invited to eat une sauce piquante de caouenne (turtle peppery stew).
