Piano accordion aka piano note. Single note for cajun and triple note for three row. The problem I always had is learning to play with music made improvisation difficult if not impossible. Lessons were learning to read the charts and play from them which is a valuable skill to be sure but worthless if you want to play by ear and be able to improvise freely. I think some violin players who learned reading music also have a hard time playing cajun fiddle by ear for the same reason.

Ah - I see now. I'd never heard the term.
Know what you mean about classical violinists. They go so far down that route that it becomes difficult for them to play with ears and heart, rather than eyes.
